2 T corn starch
2 sticks butter, softened
1 cup sugar
1 tsp. vanilla extraxct
Whisk together corn starch and water in saucepan. Stir constantly over medium heat until the mixture is thick and bubbling. Set aside to cool.
Beat softened butter and sugar together in mixing bowl on high speed until well incorporated and fluffy, scraping the sides of the bowl frequently to dissolve the sugar well. Once light and fluffy, add cooled corn starch mixture to the bowl and beat on high for 10 minutes, again scraping sides of bowl often. Add vanilla and beat for another minute.
Frosted cake can be stored in the refrigerator during warm weather but should be at room temperature when cutting and serving.
